Arrival Time 6:00, Dinner start 6:15

$150 + tax + 18% gratuity per person

Includes welcome wine and vintage wine pairings with each course 


Amuse - Scallop crudo, Fundy gin, sour gooseberry, sea truffle, irish moss, hot sauce

Course 1 - Ricotta gnudi, green tomato, pork lardon, summer garlic, onion relish, walnut

Course 2 - Coriander and pepper crusted Tuna Loin, peas, sumac dressing

Course 3 - Grilled Quail, spruce molasses, lacquered barley, swiss chard

Course 4 - Local grass-fed beef short and prime rib, summer squash succotash, new fondant potato, PBR gastrique, herb pistou

Dessert course - Strawberry shortcake, macerated berries, creme fraiche, strawberry milk
