Winemaking and Analysis

• Pinot Noir, also known as ‘the heartbreak grape,’ is the most sought-after grape in
the world, an ever-sensitive challenge for any vineyard, and not commonly thriving
in Nova Scotia.
• 100% of the grapes were bravely grown by Andrew and Lise Rand, located on the
North Mountain
• 50/50 whole berry and crushed fruit gently fermented in cooler temperatures before
a light pressing at 1.3 bars
• Matured in older French Burgundian oak barrels for 16 months. Full malolactic
fermentation followed.
• Only 200 cases were produced.
