Winemaking and Analysis

• Grapes originated from our home Estate vineyard, and from Warner Vineyards in Centreville
• Whole cluster Leon Millot and L’Acadie were gently pressed and co-fermented, then
blended with a minor percentage of Vidal and Osceola Muscat
• Blended components added wonderful floral aromatics, delicate texture and
mouthfeel
• All stainless-steel fermentation.
• Fermented long and slow at 14˚C to retain aromatic qualities of the grapes.
• Full fermentation with a temperature drop slightly before the end of completion, leading to a dry wine with a complementary acid structure
