AROMATICS: Fresh apples and peach, toasted almonds, hints of honeysuckle and brioche
TASTE: Dry, fresh lemon zest minerality. Notes of green apples, baked pear, with a slight saline finish
TREATMENT: 5 years and 5 months in tirage, consists of 95% stainless-steel fermentation, 5% neutral oak barrels, and a partial MLF
SERVING SUGGESTIONS: Best served well chilled, pairs nicely with buttery lobster, local oysters, and savory appetizers
AGING: Drinking very well now, or cellar through until 2040

Winemaking and Analysis
• Traditional Method sparkling is comprised of 100% Nova Scotia grown Chardonnay, classifying it as a 'Blanc de Blancs' (or white of whites)
• Hand harvested on October 21st at 18.2*Brix, 13.8g/L TA, and a pH of 2.98, the grapes were gently pressed, with only the choice juice used
• A slow cool ferment at 15*C helped develop strong clean aromatics, followed by 95% stainless steel aging, with 5% undergoing partial malolactic fermentation in neutral French oak barrels
• The wine was bottled June 16th 2020 for Tirage
• Disgorged November 19th 2025, with a small dosage of sugar added, leaving this wine dry or classified as 'EXTRA BRUT'
• 800 bottles were disgorged in 2025, a true small lot of this wonderful wine
