Buried 8 feet underground, this limited-edition red is unearthed once every two years for us to enjoy. We are (by our own knowledge) the only vineyard in Canada that uses this method, which has produced award winning wines for us over the years. Aged in Oak barrels for 28 months, this wine has earthy black fruit, truffle and dark chocolate notes, with hints of prune on the nose. Pairs well with roasted meats, game and duck and cured meats.
This wine is minimally handled as it is harvested, fermented and stored until it is time to transfer it to the barrels where the magic happens over a period of approximately 28 months. Then it is unearthed, settled and bottled unﬁltered. The results have led to incredibly unique product with rave reviews, that continues to delight customers and critics alike!
