AGING: Drinking very well now, but with many years of cellar potential

Winemaking and Analysis
-L’Acadie Blanc is Nova Scotia’s signature grape. It thrives in our Maritime climate and is the most commonly planted varietal thriving in our Province
-100% of the grapes were grown at our Estate, from some of our older more mature blocks of L’Acadie
-50/50 whole berry and crushed fruit gently fermented in cooler temperatures before a light pressing at 1.3 bars
-Matured first in stainless steel, followed by 10 months of aging in older French Burgundian oak barrels
-Only 280 cases were produced
