TREATMENT: 100% stainless-steel fermentation
SERVING SUGGESTIONS: Best served chilled, pairs well Pizza, soft cheeses, local oysters, and fresh summer salads.
AGING: Drinking very well now, or cellar through until 2028.

Winemaking and Analysis
• 100% grown in Nova Scotia
• Grapes originated from our Estate, and Avonport vineyard locations
• Whole cluster Leon Millot and L’Acadie were gently pressed and co-fermented, then
assembled with a percentage of Riesling
• Individual components add fruity and citrus aromatics, with rounded texture and a
balanced mouthfeel
• All stainless-steel fermentation
• Fermented long and slow at 14˚C to retain aromatic qualities of the grapes
• Fermentation halted with a temperature drop slightly before the end of fermentation,
to leave a slightly higher or off-dry residual sugar, and to offset the acid structure in
the wine.
