Winemaking and Analysis
• Riesling is a single varietal wine, and is considered one of Noble vinifera
varietals… to many, the most revered of the white winemaking grapes
• 100% sourced from our Avonport Vineyard
• A significant portion of grapes were cold-soaked on their own skins for 72 hours.
This greatly enhanced the wild floral notes of the grapes
• It was gently pressed, partially whole cluster, at 1.4 bars; then fermented in the
reductive style.
• Using stainless steel with limited exposure to oxygen, this accentuates the pure,
fragrant characteristics of this unique grape.
• Fermented long and slow at 14˚C to retain aromatic qualities of the grape.
• 400 cases produced in 2020
